Production Details Total production was 8 barrels. Two portions of Cinsault were used, with the largest portion coming from an old Darling block planted in the 1960s; a small portion of Grenache was blended in for grip and acidity. Fruit was picked by hand around 21.5-22.5 Brix, chilled overnight, then sorted the following day. Whole bunch clusters were hand-sorted, foot-stomped in a small open-top fermenter, and fermented for 10 days with 3 gentle punch-downs per day. After pressing off the skins to tank for overnight settling, the wine was racked to big old French barrels, spent 10 months in barrel, underwent malolactic fermentation, and was gently filtered before bottling. Technical analysis lists free SO2 29 ppm and total SO2 84 ppm.
