Production Details This 100% Sauvignon blanc comes from a single 33-year-old bush vine vineyard in Stellenbosch on decomposed shale soils. The grapes were harvested at around 22.8 brix on January 29, picked into small grape crates, chilled overnight, whole bunch pressed the next day, then settled overnight before fermentation in 400L old French oak barrels. Fermentation started naturally and the wine matured sur lie for 9 months with regular lees stirring. The wine was bottled in November 2020.
