Production Details This is a 100% Sauvignon blanc from a certified old vines bush vine vineyard planted in 1986 in the Bottelary ward of Stellenbosch, growing on decomposed shale soils. The grapes were hand harvested into small grape crates and placed in a cold store overnight. The following day the grapes were bunch sorted and whole bunch pressed into tank for overnight settling without the addition of sulphur dioxide before being taken to 400L old French oak barrels for fermentation. Fermentation started naturally and once completed the wine was topped and matured sur lie for 11 months with regular lees stirring. The wine did not undergo malolactic fermentation.

Palate: dried pear, guava, lemongrass, toasted almonds, velvety creaminess, textured pithy finish, oyster shell freshness
