Production Details The grapes were harvested at around 22.3 brix on February 7, picked into small grape crates, chilled overnight, then whole bunch pressed after bunch sorting and settled overnight before fermentation in 400L old French oak barrels. Fermentation started naturally and the wine matured sur lie for 10 months with regular lees stirring.
